The best blueberry and chocolate chip muffins. These muffins are so yummy and delicious. It’s the perfect breakfast as well as snack for any other time of the day. Bake these muffins up in the morning and wake everyone up with the amazing smell.

Muffins are always a great treat to have just because you can choose from a whole range of ingredients to make them the way you want. Go for savory muffins or sweet muffins…yummy muffins all the way….

What’s the difference between a muffin and a cake??

Well muffins are really a type of bread. The texture is a lot more denser to that of a cake. Where cakes are light, fluffy and much sweeter too. Muffins have a much chewier texture with a moist crumb and once baked you will find a few holes spread throughout. Best thing about muffins is that you can actually enjoy this for breakfast especially when you just want to have something easy to pick up and take to go.

Here in this recipe I chose to make blueberry and chocolate chip muffins. There’s always blueberries in my house and I like to add them in most of my sweet recipes. Check out my recipe for homemade blueberry jam. Remember you can always use frozen blueberries if you don’t have fresh ones. The blueberries look great in the muffins, bursting up while baking. The extra addition of the chocolate chips are just the perfect ingredient to go with the blueberries. Both ingredients together give the muffin a sweet taste and a mix of textures too.

Also instead of using milk chocolate chips I went for semi sweet chocolate chips just because it balances out the flavor especially with the blueberries. These two ingredients combine together really well and make the muffins that much more tastier . Not to forget you can also tempt the kiddos to eat these muffins too!!

Another essential ingredient to make this muffin even more tastier

One more ingredient that I decided to use was dark brown soft sugar. This gives the muffins a nice dark golden brown color and a robust flavor almost like toffee and caramel. It’s super yummy and brings the muffins together beautifully.

You can store these muffins in a airtight container and leave them on your counter at room temperature for 2-3 days or even freeze them in zip lock bags for up to 3 months…

Recipe for Blueberry and Chocolate Chip Muffins

Ingredients

  • 1 and a half cups of all purpose flour

  • 2 teaspoons of baking powder

  • 1 teaspoon of salt

  • 2 eggs

  • 1/2 cup of cooking oil

  • 1 tablespoon of vanilla extract

  • 2/3 cup or 135 grams of dark brown soft sugar

  • 1/4 cup of milk

  • 1 cup of fresh or frozen blueberries

  • 1/2 cup of semi sweet chocolate chips

Directions

  • Preheat oven to 400F/200C and line a muffin or cupcake tray with muffin liners
  • In a mixing bowl whisk together the flour, baking powder and salt
  • In another large mixing bowl whisk together the eggs and sugar
  • Then add the oil, vanilla extract and milk into the eggs and sugar, whisk together
  • Use a sieve to sift in the flour, baking powder and salt mixture
  • Gently fold the mixture with a spatula
  • Add in the blueberries and semi sweet chocolate chips
  • Mix all the ingredients in well, making sure to evenly distribute the blueberries and chocolate chips
  • Using a ice cream scoop or spoon, divide the batter into muffin tin with liners 2/3 of the way full
  • Bake for 15-20 minutes. Insert skewer after 15 mins. If it comes out clean then muffins are baked, otherwise bake for an additional 1-2 minutes
  • Transfer onto a wire rack to cool down and enjoy!!

Notes

  • Baked muffins will stay good in an airtight container at room temperature for 2-3 days.
