Chicken korma Bangladeshi style, authentic recipe! A popular Bangladeshi rich dish! Chicken pieces cooked in mild spices and simmered in milk. The perfect dish to enjoy with friends and family. Chicken korma is a traditional Mughlai dish which is well liked in Bangladeshi. The use of ghee and milk give this dish a unique aroma and exotic taste.

Everyone has there own take on chicken korma. It’s definitely a mild dish so you don’t get much heat but still very flavorsome. Chicken Korma consist of flavors of cardamom and cinnamon compared to the other more pungent spices. This dish can be cooked using chicken breast or drumstick and thighs, I like to use a mix just like my mom cooks it. Growing up whenever there was a special occasion or even just guest coming over I remember my mom would always cook this dish and till today it’s still one of my most favorites. Chicken korma has always been mom’s signature dish. Childhood memories I guess. The best thing is that now my kids love it too and that makes me a super happy mom!

This version is more of a classic Bangladeshi style korma cooked down with onions which gives a slightly sweet flavor, some spices and then simmered in milk and topped off with golden fried onions and served with basmati rice. Absolutely delicious….. it’s a must try recipe especially if you want to try a mild style curry. Korma taste great with pilau rice and a side of salad. It’s a easy dish to make and enjoyed by children as well as the adults which makes it the perfect dish to make when you are having lunch or dinner parties.

Here in this blog I will be sharing my moms chicken korma, a Bangladeshi style authentic recipe. It’s a recipe which she also grew up having and I know my grandma also made this dish on special occasions too . This korma is perfectly balanced, full of flavor and you and your guest will be taking seconds for sure!

Chicken korma Bangladeshi style

Ingredients

  • whole chicken, 8 pieces, skin off

  • 1/2 cup Ghee or oil

  • 2 medium sized onions finely chopped

  • 2 cloves of garlic minced

  • 1 and a 1/2 inch of ginger minced

  • 2 teaspoons of salt

  • 1/2 teaspoon of ground black pepper

  • 1/2 teaspoon of ground cardamon

  • 1/2 teaspoon of coriander powder

  • 1/4 teaspoon of cumin powder

  • 2 bay leaves

  • 1 cup of whole milk

  • 1/4 cup fried onions (beresta) for garnish

Directions

  • Heat oil/ghee in a saucepan, or heavy bottom pan
  • Add onions and cook until golden brown 6-7 mins
  • Add salt, minced ginger and garlic, stir. Cook for 2 mins medium heat
  • Add all the spices and bay leaves, stir and add 1/4 cup of water. On medium heat
  • Then add in the chicken pieces, coating well with the sauce, cover the pot and cook on medium high heat for 6-7 mins
  • Uncover and stir, then add the whole milk, stirring well. Bring to a boil, then simmer for 15-20 mins. Making sure chicken is cooked thoroughly
  • Garnish with fried onions and serve with basmati rice.

Notes

  • Any leftovers can be stored in the refrigerator for up to 3 days.
