One bowl easy chocolate chip banana bread recipe! If there’s anything I have baked the most in 2020 it definitely has to be banana bread. All those extra bananas in the house really came to good use in this super easy recipe and it was well worth it. To be honest I have never been a big fan of banana bread just because I never made it before and also because the ones I did have, I never liked…unfortunately they didn’t meet my taste expectations..
Until one day my sister recommended one of her recipes. I was like, “no I’m not going to make it, I don’t like banana bread so I’m not going to waste my time”. It took me some convincing and I decided to go ahead and try it out, but I did mention to her that if it didn’t turn out good then she would be in trouble lol…
I was totally wrong it’s the best banana bread I have had, till today every time I make it I always praise her and tell her how good it was and thank her so much for such a great recipe. My whole family love it and it’s such a great snack too. I make it and cut it up into the perfect sizes, put it in a airtight container and it’s ready for anyone to enjoy.
The reason why it’s that extra bit tasty is because I add chocolate chips, I use semi sweet chocolate chips so the balance of sweetness with the other ingredients is just perfect. The recipe also uses white and light soft brown sugar, making the banana bread nice and soft as well as giving it that mellow taste. Another addition is using melted butter which gives it more of a spongy texture than a crumbly texture. Also saves you time so you don’t have to leave the butter out to soften. You can easily melt the butter in the microwave in 10 second burst and check to see if it’s melted.
Another crucial ingredient and probably the main ingredient is of course the bananas. You will need to use ripe bananas, so bananas that are speckled with brown spots. These bananas will make the banana bread with a light crumb, holding the shape of the bread well. If you use very ripe bananas that are brown all over then you will get a more sweeter taste, giving the bread a more soft and dense texture. I usually just go for ripe bananas and if my bananas do end up going super ripe I have also used them too and they work perfectly fine. Mash the bananas up well with a potato masher or a fork.
Making one bowl easy chocolate chip banana bread
The steps are very easy and simple, there’s really no need for using a stand mixer here, as there’s no creaming of the butter and sugar. So everything can be mixed by hand.
In a bowl crack in the eggs, add the cooled down melted butter and sugar. Give that a good mix using a spatula or a whisk. In go the mashed up bananas and vanilla extract. Mix well. The mixture might look a bit lumpy but will be fine once the flour is added in. In another bowl measure out the all purpose flour and baking powder. I also like to add the chocolate chips to the flour mixture and coat them, this helps the chocolate chips from sinking right to the bottom of the banana bread and keeps them distributed throughout.
Then give one good stir with your spatula making sure everything is mixed well but do not over mix.
When it’s time to bake the banana bread of course using a loaf pan is ideal but I like to bake mine in a 9×9 brownie pan just because I like the shape and I also like to cut them up in a certain way.
Grease the loaf tin with non stick cooking spray and pour in the banana bread mixture. You can also line the pan with parchment paper so you can take it out easily once baked.
Baking
I bake my banana bread at 320 degrees Fahrenheit for exactly 55 minutes, because there are chocolate chips in them and therefore takes slightly longer to cook through. You can use a skewer to check by inserting into the bread and see if it comes out clean.
When the bread has cooled down you can cut the bread up and store in a airtight container and leave it out on the counter for up to 4 days. Enjoy this one bowl easy chocolate chip banana bread recipe with friends and family!
