The Eggs
Some of you may ask does it matter what kind of eggs I use? Well the answer is ‘not really’. You can really use any type of eggs whether it’s free range or organic and still make the perfect scrambled eggs. I just prefer to use organic for my kiddos and myself.
Adding additional ingredients like any meats or veggies
In my opinion, scrambled eggs best to leave them alone just because when you add these extra ingredients you end changing the color of your end product and also the scrambled eggs will become more watery. So if you do want to have any additional meat or vegetables it will be ideal to cook them separately and then just have them as a side or topping over the eggs once they have cooked.
Preparation
Crack the eggs in a bowl (2 eggs per person), sprinkle in some salt and whisk using a fork or hand whisk so the eggs are mixed up well.
Cooking
You want to use a heavy bottom non stick pan, this will help to cook the eggs evenly without sticking to the pan.
Over a medium heat, melt a knob of butter in the pan, just enough to coat the bottom of the pan. I love a good quality butter… makes all the difference.
Add in the eggs and wait for the eggs to just very slightly start to set. Here use a rubber spatula this will help to give you more flexibility and stir the eggs every 5 seconds, pushing the eggs from one side to the other making sure that the uncooked eggs touch the pan.
You want to cook the eggs on a medium low heat, slowly bringing all the eggs from the edges of the pan. You will know when the eggs are cooked, they will look silky and slightly runny. At this point the eggs can be taken off the heat. The eggs will continue to cook even when they are taken off the heat. Transfer the eggs on to a plate or on top of a slice of toasted bread. Sprinkle with black pepper and enjoy.
