A refreshing virgin strawberry mojito recipe. A delicious sweet and tasty non-alcoholic drink which can be served all year round and of course best served when strawberries are in season. Sweet and minty, this drink is my all time favorite. It’s super easy to make and perfect for parties. Even better the kids get to enjoy this strawberry mocktail too.
This drink requires only a few ingredients and can be made instantly. In this recipe I use a simple syrup instead of just adding sugar and it tastes that much better. Simple syrup is made using only two ingredients, sugar and water. Equal quantities of sugar and water are added into a saucepan and cooked until the sugar dissolves. This process takes only a few minutes and then you can cool it off and have it ready to use. The really good thing about using simple syrup is you could make this ahead of time and keep it in the refrigerator for up to a month. So use it whenever you need to.
Also if you could get hold of farm fresh strawberries than even better. Using farm fresh strawberries gives this strawberry mojito a sweeter taste and vibrant color. So whenever I can get hold of local fresh strawberries then I always keep some aside to make this delicious strawberry mojito.

To make this drink a few more essential ingredients are needed like fresh mint, fresh lime and club soda/sparking water. A handy tool to mix the ingredients together called a muddler. If you can get hold of a muddler than this will make your job even more easier. A muddler is used to mix the strawberries with the mint leaves and simple syrup. This tool Just helps to really bring out all the flavors and essential oils. If you don’t have a muddler than you can use the end of a wooden spoon. It will work just right!!
Another essential thing to do prior to bringing the mocktail together is to juice your limes. Instead of just squeezing the juice out using your hand it’s much easier to use some type of citrus juicer. This will make things quicker especially if you want to make a big quantity of this drink.
And don’t forget the ice …. crushed ice into your glasses just before pouring in the strawberry mojito. You can make this virgin strawberry mojito in individual glasses or even a big quantity for pitcher size or beverage dispenser. To finish off garnish the drink with whole mint leaves and slices of lime.

Ingredients
6 strawberries quartered
8 mint leaves
1/4 cup of simple syrup
1/4 cup of fresh lime juice
Club soda/sparkling water to fill up glasses
Crushed ice to pour into glasses
- For the simple syrup
1/2 cup of water
1/2 cup of sugar
Directions
- To make simple syrup
- Add equal quantities of water and sugar to a saucepan
- Stir the ingredients on a medium high flame
- Bring the mixture to a simmer until the sugar has completely dissolved (2-3 minutes)
- Set aside to cool (This simple syrup will stay good in refrigerator for up to 4 weeks)
- To make strawberry mojito
- In a pitcher or jug add in the strawberries, mint leaves and simple syrup
- Muddle together to release juices and essential oils
- Add in the lime juice and stir
- Top up with the club soda/sparkling water and stir (here you can taste to see if you want to make it more sweeter by adding more simple syrup)
- Pour into glasses filled with crushed ice
- Garnish with extra strawberries and lime slices
- Enjoy!!!
